Menu Plan Monday



Here's my first Menu Plan Monday. I decided that I was missing out of all the fun!Our family follows a diabetic approved diet. The recipes are low fat, low carb and high on veggies, herbs and taste!

Monday - Turkey Meatball Soup

Tuesday - Chicken Tortellini Salad

Wednesday - Meatloaf, Roasted Red Potatoes with Rosemary, Mixed Green Salad

Thursday - Sassy Southwest Pork Chops, Mixed Greens, Green Beans


Friday - Greek Grilled Chicken Vegetable Salad with Warm Wheat Pita Bread

I use green and/or red peppers, depending on what I have around the kitchen.

Looks good! I have some fake chicken strips that I THINK would work with that chicken salad recipe to make it vegetarian!

I adore rosemary roasted potatoes. Another good place to add rosemary is in scrambled eggs. I actually do egg whites, rosemary and a tablespoon of cream cheese, low fat for the hubby, hmm hmm good!

What a great menu--do you always cook like that? I usually cook 4 times a week. We eat at church on Wed., eat out on Sunday, and eat left-overs once! I ended up making spaghetti pie instead of plain spaghetti--mucho yummo! Thanks for stopping by!
