My husband loves chocolate cake! On Friday, I'll be celebrating my birthday and thought I'll have our teen make a chocolate cake we can all enjoy!
CHOCOLATE CAKE FOR DIABETICS
3/4 c. flour
3 tbsp. cocoa
1 tbsp. sweetener
1 tsp. baking powder
3/4 c. cold water
1 tbsp. oil
1/4 tsp. baking soda
1 egg, beaten
1 tsp. vanilla
1/4 tsp. salt
1/4 c. cold coffee
Sift together dry ingredients. Blend coffee, cocoa, egg, sweetener, oil, water and vanilla. Add dry ingredients, mixing only until smooth. Bake in 8" square pan greased with butter. Cover pan with foil and place in shallow pan of water.
Bake for 25 minutes in 350°F. oven. Remove from pan onto rack and cool.

I'm sure we all know that in the during these hard times house values have dropped. It seems more financial people are stating that buying a home was never a sound investment. They state the days of buying a home, selling it in 30 years and making money on it are over.
So, I was wondering do you own or rent? If you rent, do you plan on buying in the future?
Charles and I have never owned because we were never ready to settle down. We know that we don't plan on living in Las Vegas long term so we'll continue renting.

Foodshare America - Save Money on Your Groceries
If you live in Colorado, Kansas, Louisiana, Missouri, Nebraska, New Mexico, Oklahoma, South Dakota, Texas, and Wyoming and are looking for a grocery coop visit Foodshare America.
I checked out their January and February menus and have to say the prices, quantities of food and variety are better then Angel Food Ministries. The menus remind me of Golden Share, in Southern California.
But, as we all know it's about all about the quality. If you've ordered from them I would love to hear your feedback.

Question: Do You Still Write Checks?
I was cleaning my junk drawer and actually came across our checkbook. It got me thinking when was the last time I wrote a check? You know what? I don't remember.
Fresh & Easy grocery stores does not accept personal checks. And in September 2009, Whole Foods was considering no longer accepting them.
So, here's my question: Do you still use personal checks to pay for bills, products and services?

Validation Session Went Long!
How about 6 hours to figure out why my computer wasn't connecting to their servers?
My husband and I were upset after the first 4 hours. The computer technicans were very nice, patient and reassuring. I just couldn't let myself hope that they were going to figure things out. I didn't want to be disappointed.
After spending $150 with Geek Squad last week to remove a virus and fix several corrupt files, buying phone lines, webcam, and a headset, we could just see this job slipping away!
The resolution: Turns out that my computer wouldn't connect using Internet Explorer. We had to use Firefox instead!
So, it's official! I'll be starting on Monday, January 25th, 6am my time! I'm going to need a big cup of coffee!

I got up this morning prepared to hit the grocery store and found out that the state hasn't deposited my unemployment benefits. I tried calling but their phone lines are busy.
This is horrible because unlike an employer who has a computer glitch but would let you know about the delay via email the state doesn't inform the recipients.
I hope the fix this problem soon.
